Carmine is one of the original red colours, providing an exceptionally stable pigmnet for food and beverage applications. It is prepared from the shell of the Cochineal insect, which lives on cactus South America, and has been used as a colouring agent since the 15th century.
Carmine is available in many variants including:Water-soluble, oil-soluble, liquid, powder, paste and suspension formats.
Strengths are varied too, with a range from 2.5% to 50%.
