An introduction to Fruit Aromas

Kanegrade offers a range of Fruit Aromas, which are specialised ingredients used in beverages, foods, flavourings and fragrances to impart authentic fruit notes. Also known as Fruit Esters, Fruit Essences and Fruit Distillates, they are created during the fruit juice concentration process when the vapour is condensed and collected; the condensed liquid being the fruit aroma.

They are highly concentrated; typically 150-fold, but up to 1000-fold, water-soluble and therefore easy to use in production. They are particularly sought after in flavour manufacturing since they can be readily used in FTNF (From the Named Fruit) flavours and are also used as an add-back in reconstituted beverages.

Technical Information

  • Production Methods:
    Kanegrade fruit aromas are produced as the liquid condensate from the fruit juice concentration process. Aroma recovery systems are used during fruit juice or concentrate production to capture the volatile organic compounds (VOCs) responsible for characteristic fruit scents. These VOCs include esters, aldehydes, alcohols, terpenes, and ketones, each contributing unique notes to the fruit aromas.
  • Functional Properties:
    Fruit aromas deliver sensory impact at low dosage levels and can be used to restore or boost aroma lost during processing. They are suitable for both liquid and dry applications and when incorporated into a flavouring can be formulated for stability under various processing conditions.
  • Aroma Compounds:
    The key aroma compounds in fruits are volatile organic compounds (VOCs) such as esters (sweet, fruity notes), aldehydes (green, fresh notes), terpenes (citrus, floral notes), alcohols, and ketones. The specific VOC profile varies by fruit species and variety, influencing the final aroma character. For example, esters dominate in banana and apple, while terpenes are prominent in citrus fruits.
  • Shelf Life and Storage:
    Fruit aromas are stable when stored in sealed containers, away from light, heat, and strong odours. For best results, store chilled (0-8 degrees centigrade) to preserve aroma intensity and quality.
  • Water-Soluble:
    Fruit distillates in this sector are typically water-soluble, enabling easy incorporation into drinks and water-based systems.
  • No Sugar, Low-Calorie:
    As the distillation process removes sugars and solids, the resulting product delivers flavour without added sweetness or calories.
  • Long Shelf-life:
    The absence of perishable fruit matter or sugars extends the stability of the distillate, aiding with shelf-life management.

Pack size and MOQ:
Most products are available in 20Kg bag-in-box with a minimum order quantity of 100Kg. Some are supplied in 200Kg+ drums only. Availability varies throughout the season.
