Technical Information

  • Production Methods:
    Kanegrade fruit juice concentrates are produced using advanced techniques such as vacuum evaporation, freeze concentration, and membrane filtration depending on suitability to the fruit. Freshly extracted juice is first clarified, then concentrated by removing water under reduced pressure and low temperatures to preserve flavour, colour, and nutrients. Multiple-effect evaporators and aroma recovery systems are often used to retain and add-back natural fruit volatiles resulting in the highest possible quality.
  • Functional Properties:
    Fruit juice concentrates provide high fruit solids content, intense flavour, and vibrant colour. They are easy to blend, dissolve, or reconstitute, making them suitable for a wide range of liquid and semi-solid applications. Concentrates can also contribute natural sweetness and acidity to finished products.
  • Nutritional Profile:
    Concentrates retain much of the vitamins, minerals, and phytonutrients of the original fruit, though some heat-sensitive compounds may be reduced during processing. The high Brix level (typically 65–72° Brix) ensures a dense source of fruit sugars and nutrients.
  • Formats and Solubility:
    Available in liquid or frozen forms, concentrates can be supplied at different Brix levels and clarified or cloudy, depending on the application. They are fully water-soluble and can be reconstituted to single-strength juice by adding water.
  • Shelf Life and Storage:
    Fruit juice concentrates are shelf-stable when stored in sealed containers at cool temperatures. For optimal quality, store in a refrigerated or frozen environment to preserve flavour, colour, and nutritional value. Aseptic and non-aseptic packaging options are available for different supply chain needs.
